Pineapple Salad. Dice contemporary pineapple with an equal quantity of contemporary sweet cherries, and serve with dates cut in pieces with stones removed. Serve with almond cream or whipped dairy cream.
Strawberries and Bananas With an equal quantity of strawberries, dice ripe bananas and steamed figs cut fine, with a tablespoonful of pecan or hickorynut meats; combine all, and serve with nut cream or dairy cream.
Cream, or Salad Dressing. Blanch almonds by simmering slowly 5 minutes, and slip off the skins, dry and brown slightly in the oven, then grind as for nut butter through the nut mill. Either water or fruit juice could be added to this, using a tiny quantity at a time and combine as for peanut butter. If the entire quantity is mixed with water it will spoil. When created very thin, this cream is suitable to be used with any fruit salad, and will be used with any breakfast food when dairy cream is objectionable. During a similar way, beechnuts and cashew nuts could be used in creating a very palatable cream to be used with breakfast food, or as a dressing for desserts. When used with desserts it is mixed with fruit juice, or dilute fruit juice, rather than water.
Soups. Though meat soups are used very largely in the past, it has been found by actual tests that such have an acid ash, and only the meat flavor to recommend them, for they contain but very little if any nourishment, and the flavour is given by the presence of extractives which would are eliminated by the animal through the eliminative organs had the animal lived. Vegetable soups or broths are made in minerals and vitamins, and the ash is alkaline in reaction. Asparagus Broth. Season with cream or soybean milk and salt, the water in which asparagus has been cooked. Other broths could be prepared in the same way by using the broth in which different vegetables are boiled, particularly the leafy vegetables. In using spinach for this purpose, it should 1st be parboiled 3 minutes to remove the oxalic acid, though tiny in amount.
Vegetable Soup
a pair of potatoes a pair of stalks celery
1 qt. cold water 1 massive onion
1 pt. bean or pea broth 1 carrot
a pair of tsp. butter Salt to style
1 cup strained tomato juice
1 tsp. Be-jex or similar preparation
1 pt. water in which potatoes were cooked
Grind the vegetables through a food chopper with the coarsest cutter, and place them to cook in the water. After boiling slowly for a half an hour, or till tender, add the potato water and bean broth, and continue stewing slowly for an additional half hour; add the seasoning and tomato before serving. Soups could be thickened with a tablespoonful of flour or by use of boiled un-milled rice, oats or barley.
